Instant Pot Pumpkin Puree

This is the easiest way to cook a pumpkin! You cook it whole and cut it after cooking.  It will be soft enough to cut easily!

What you need

1 pie pumpkin 1 and a quarter cup water Instant Pot - 6 or 8 quart, 8 quart is best.

Wash the outside of the pumpkin.   We use a little bit of vinegar and rinse with water.  You can use a brush to wash off the dirt as well.

Using a fork or a sharp knife, poke a few holes into the top of the pumpkin.

Place pumpkin on the trivet inside the Instant Pot.  Pour water into the pot.

Place the lid on and set the vent to sealing.  Cook on high pressure for 12 minutes.

Allow it to do a natural release.  Once the pin drops, remove the lid and let the steam vent before carefully removing pumpkin.

Once the pumpkin is cool enough to handle, cut in half, scrape out the seeds and remove the skin.

Place the cooked pumpkin into a food processor and blend until smooth.

The puree is ready to use in your recipe!  Store in fridge or you can freeze for later.
