Delicious No Bake Blueberry Strawberry Cheesecake
The perfect summer dessert with fresh berries!
What you need:
Heavy cream - or use store bought whipped topping
The Berry Sauces
Add blueberries, water, sugar and lemon juice to a saucepot.
Mash berries with a masher.
Bring to rapid simmer and cook 4 minutes, stirring often.
Mix cornstarch and water together. Slowly pour into sauce while stirring. Cook for 1-2 minutes more.
Remove from heat and allow to cool all the way.
Repeat for strawberry sauce.
We use a classic graham cracker crust made with just graham crackers and butter. You can use your favorite!
We make a homemade whipped cream using heavy cream, vanilla extract and sugar. You can use store bought frozen whipped topping in place of homemade.
Cream softened cream cheese for about 1 minute.
Add sugar and lemon juice, mix for 1-2 minutes until smooth.
Fold in 1 cup of whipped cream.
Take 1 cup of filling and mix blueberry sauce in with spatula.
Take 1 cup of filling and mix strawberry sauce in with a spatula.
Carefully spread blueberry filling over the crust.
Spread the remaining plain filling next.
Spread the strawberry filling over the top.
Chill, Decorate and Serve
Chill for at least 4 hours to set in fridge.
Decorate with whipped cream - optional.
