Grilled ribs do not have to cook all day to be amazing! This quick and easy recipe will be your new favorite preparation for ribs with a simple dry rub and lime juice.
Place the rib rack on a surface like a cutting board. Squeeze the juice from the lime all over the top and bottom of the ribs.Rub the minced garlic over top and bottom of the ribs as well. Let sit for about 15 minutes.
3-5 pounds St Louis rib rack, 1 lime, 2 cloves garlic
Mix together salt, paprika and chipotle. Rub all over both top and bottom of the ribs. Sit for another 5-10 minutes.
2 teaspoon paprika, ½ teaspoon salt, ½ teaspoon ground chipotle
Place bone side down and cook for 35 minutes. Do not open lid unless you suspect a flare-up. See notes if you would like to add BBQ sauce.
After 35 minutes, flip and cook for another 15-20 minutes with the lid closed.Pork needs to be cooked to at least 145°Fahrenheit, but they will still be slightly pink. We prefer our ribs to be between 160-165° Fahrenheit for best texture and flavor.
Remove from the grill and allow to rest for 5-10 minutes before cutting the ribs.

For direct heat, have all burners on and the grill heated to 350-375 degrees. For indirect heat, keep the burner you will be cooking them over off and heat your grill to 350-375 degrees. Direct or indirect? Direct heat will give you a slightly crispier outside and indirect heat will be tender on the outside. It is a personal choice, the directions are the same. Cook to at least 145 degrees Fahrenheit.Ground chipotle is a little spicy and gives a nice smoked flavor, but the amount here is not a lot of spice. If you want a little more spice, I recommend using cayenne along with the chipotle. Smoke box - You can use a smoke box on the grill with your favorite wood chips in it to add a nice smoke flavor. If you do, you may want to decrease the amount of chipotle you use.Adding BBQ sauce - BBQ sauce is delicious on them! Cook them for 35 minutes bone side without BBQ sauce. Just before flipping, coat the top of the ribs generously with your favorite BBQ sauce. Flip and coat the bone side generously. Cook for about 15 minutes, flip and cook for another 10 minutes. If you would like more sauce, you can add more after flipping.
