Homemade Mac and Cheese



small shaped pasta  cheddar   Colby Jack  milk  heavy cream  flour butter  garlic powder cayenne pepper (optional)

Cook Pasta

Cook pasta until it is almost done if baking mac and cheese or cook until done if not baking.  Drain but don't rinse.

The Roux

Add the butter and flour in a saucepan and cook for 1 minute over medium heat stirring constantly.  

Milk and Cream

Slowly pour milk and cream into the saucepan while stirring constantly.  Add garlic and cayenne pepper. Cook for 2 minutes stirring constantly. 

The Cheese

Stir in all but about 1 third cup of shredded cheese a handful at a time. Stir well and heat until smooth.  Remove from heat.

Add Noodles

Stir in the noodles and pour into a 2 or 2 and a half quart baking dish.  Sprinkle remaining cheese over top.


Bake at 400 degrees Fahrenheit for about 20 minutes, until the cheese layer has desired amount of browning.


We like to let it sit for about 10 minutes before serving, but that is optional.
