Easy Loaded Mashed Potato Casserole

This loaded mashed potato casserole can be prepped up to 2 days ahead.  It can be prepped earlier and frozen as well. You can use leftover mashed potatoes or fresh cooked potatoes.

Potatoes Butter Milk Sour cream Cream cheese Shredded cheese Bacon pieces Chives Garlic Parsley Salt  Pepper

Ingredients

Add potatoes and enough cold water to cover them into a pot. Bring to a boil and cook until you can easily stick a fork in them. Drain.

Mix together potatoes, milk, butter, cream cheese, sour cream, half of the shredded cheese, chives, garlic powder, salt, parsley and pepper together in a mixing bowl.

It is best to use a mixer (hand or stand mixer) to mix the potatoes with everything, but it's not required.  You can use a masher, but a mixer will get it smooth with no large lumps.

Some small lumps are ok, but try to get large lumps out. Spread the potato mix into a 2.5 to 3 quart casserole dish.

Add remaining shredded cheese and bacon pieces to the top

Bake at 375 degrees Fahrenheit for 25-30 minutes.   It should be heated through and cheese melted.
