Pumpkin Pancakes

Dry Ingredients – 2 cups flour  – ¼ cup packed brown sugar light or dark – 3 teaspoons baking powder  – 1½ teaspoons pumpkin pie spice – ½ teaspoon salt

Wet Ingredients – 1 cup pumpkin puree  – 1 cup plain yogurt   – 1 cup milk – 1 teaspoon vanilla extract – 2 eggs large

Mix together flour, baking soda, salt, brown sugar and pumpkin pie spice.  Set aside.

Using a whisk, mix together the pumpkin puree and yogurt in a mixing bowl

Pour milk in and mix it with a whisk until it is mix completely.

Add in the eggs and vanilla extract.  Whisk for about 30 seconds until mixed well.

Pour the dry ingredients into the wet ingredients and whisk until incorporated

Do not overmix the batter.  Batter should be thick and small lumps are ok.

Pour about 1/3 cup batter onto hot griddle and cook about 1 and a half minutes until these bubbles form - flip.

Cook for about 1 and a half minutes, until they are golden brown on bottom.  Enjoy!
