The Best Apple Pie

Ingredients  1 double crust for 10 inch pie  7 cups apples peeled and sliced 1 Tablespoon lemon juice 1 Tablespoon sugar 1 teaspoon cinnamon Sauce for apple pie 4 Tablespoons butter  2 Tablespoons flour 2 Tablespoons water ½ cup dark brown sugar packed

Peel and slice the apples, place in a bowl.  Add the lemon juice, sugar and cinnamon.  Toss to coat.

Prepping pie crust

Roll out the bottom crust and place into the bottom of the pie dish. Optional - brush a thin layer of a beaten egg over the bottom crust.  This helps prevent a soggy crust.

Place apples into the bottom pie crust.  Be sure they are slightly heaping.  Peel and slice more if they are not.

Making the sauce

Add butter and flour to a saucepan.  Once butter is melted, cook for 1 minute. Add in water and stir constantly - it will thicken quickly.

Add the brown sugar to the butter, flour and water mix.  Cook stirring often for about 1 minute. Pour over the apples in the pie crust.

Place top crust on top of apples.  If not doing lattice, be sure to put 4 slits in the top crust - about 2 inches long. This is important to allow it to vent as it cooks.

For a nice shine: Mix an egg with 1 tablespoon water or milk. Brush across the top crust before baking.

If you have an old baking sheet, place the pie on it.  You can cover a pan with foil as well.   This helps prevent soggy crust and a mess if the filling bubbles out.

Bake at 425 for 10 minutes. Reduce temperature to 350 and bake another 35-45 minutes.

This slices best if you allow it to cool before slicing.
