The Best Peppermint Cookies

Peppermint cookies are easy to make and perfect for the holidays. You can roll and cut them or make them into pinwheels.

Ingredients

3 cups flour 1 teaspoon baking powder 1 teaspoon baking soda ½ teaspoon salt 1 cup butter  ½ cups sugar 2 eggs 1 teaspoon peppermint extract 1 teaspoon vanilla extract food coloring 

Step 1

Butter and Sugar

Allow butter to soften at room temperature. Cream butter and sugar on high speed for about 2 minutes.

Step 2

Add in eggs, vanilla and peppermint extract.   Beat on high speed for about 1 minute.

Mix together the dry ingredients in a separate bowl.   Pour dry ingredients into creamed butter/sugar mix and mix on low until combined.

Peppermint extract is clear. Food coloring is optional but without it your cookies will look like a sugar cookie.   We use icing coloring but regular food coloring works great too.

If you are doing pinwheels, take half the dough out.  Add food coloring and mix on low until combined.

Refrigerate

Wrap dough in plastic wrap.  If doing pinwheels, divide dough into 4 sections. Refrigerate at least 1 hour.

Shaping

Roll 1 of each color into rectangles close in size. Place on top of each other and wrap as tightly as you can lengthwise. Cut into quarter inch slices.

Step 7

Bake

Place on baking sheet about 2-3 inches apart. Bake at 350 degrees Fahrenheit for 9-11 minutes.
