Potato Salad with Egg

Potato Salad with egg is a delicious and satisfying dish that is popular at barbeques, picnics and family gatherings.

Salad Ingredients

potatoes hard boiled eggs red bell pepper  green bell pepper  yellow bell pepper  carrot shredded  paprika for garnish parsley for garnish

The Dressing

scallions mayo spicy mustard apple cider vinegar sugar salt black pepper garlic powder celery seed

The Potatoes

Boil the potatoes whole until they are  fork tender.  Boiling them whole helps to cook them evenly for your potato salad with egg.   Allow to cool all the way before peeling and cutting the potatoes.

Dressing

Prepare the dressing before cutting the veggies so it has time to mix the flavors throughout the dressing.  Set aside.

The Salad

Cut up the potatoes, peppers, hard boiled eggs and shred the carrot.  Mix together in a large mixing bowl. Stir in the dressing and mix well.  

Garnish and Serve

Pour the potato salad with egg into a serving bowl and sprinkle evenly with parsley and paprika across the top. Serve immediately or store in the fridge until ready to serve.
