Instructions
Heat grill to 400 degrees but keep one burner on low. If using charcoal, you want the potatoes to go to the side away from the hottest part of the grill.
Peel and cut potatoes into small bite sized pieces. Rinse them and place them in a gallon sized bag or a large bowl.
2 pounds potatoes
Pour the olive oil over the potatoes and toss well to coat thoroughly.
2 Tablespoons olive oil
Mix the seasoning ingredients together in a prep bowl and pour over the potatoes. Toss to coat until they are thoroughly coated.
Cut off 2 pieces of foil about 18 inches long (doesn't have to be exact.) Pour half the potatoes onto each piece of foil.Fold the ends together longways and then fold the ends up or pinch them together to seal the foil packs.
Place over the burner that is set to low (or off to the side for charcoal) and cook at 400° Fahrenheit for 30-40 minutes. Carefully check the potatoes at 30 minutes and continue to cook longer if needed. They are best when they are fork tender.Grills vary and times may need to be adjusted depending on the size of your potato chunks.
Notes
Serving sizes and nutritional values are estimated. The serving sizes are based on about half a pound of potatoes per person. For the seasoning - You can use store bought or any homemade ranch seasoning as well. Store bought would be one small packet. If you already have our homemade seasoning or another homemade seasoning made, you would use 3 tablespoons. For salt - We still use half a teaspoon of salt when we use already prepared homemade ranch seasoning. But store bought you may not need it. Adjust to taste.Variations (no change in cook times for these) -Parmesan ranch potatoes - Add about 2 tablespoons of store bought grated parmesan cheese or 3 tablespoons fresh grated parmesan cheese to the potatoes with the seasoning and toss to coat. Cook as directed above.Bacon ranch potatoes - Add bacon to the top of the potatoes before closing the foil packs. Can use fresh cooked and crumbled bacon or real bacon pieces (packaged and sold in the salad dressing isle.) Add desired amount of bacon - probably 1-2 tablespoons of real bacon pieces per foil pack or 4-5 pieces of bacon cooked and crumbled split between the two foil packs. Use as much as you would like tho.Bacon and cheese ranch potatoes - Add the bacon as directed above. Sprinkle cheese over the top of potatoes just before closing the foil packs, be sure to close loosely so the cheese does not melt to the foil. I recommend 4 cheese Mexican or a cheddar mix, but use your favorite! We use between a quarter and one third cup shredded cheese for each foil pack, but you can add more or less.
